.jpg) BAKERY OVEN
Bread products, such as bread rolls
and baguettes can be baked either completely or par baked in a
Frampton oven. Alternatively, frozen par baked rolls, baguettes or
similar breads can be baked off from frozen. This is ideal in an in
store operation where full bread making facilities are not
available. As an example, frozen bread rolls can be baked off in 5-6
minutes by an unskilled operator, giving the benefits of freshly
baked product without the need for skilled bakers. Similarly,
pre-made par baked Garlic bread can be baked off in foil to retain
the moisture and/or butter that it contains.
Quiche and Milk Puddings,
considerable savings in bake time can be achieved when baking
quiche, rice puddings or other milk-based products. By zoning the
oven it is possible to reduce the bake time when compared to
traditional methods of baking such as deck or rack ovens which can
only be set at one temperature. It is also possible to brown or skin
the tops of rice puddings or similar products whilst being baked by
increasing the final zone temperature or alternatively previously
baked product can be browned or 'skinned' either on a standard
Frampton oven just by using top heat or alternatively this finish
can be achieved by using a Frampton grataniser.
Scones, Fancy Cakes or any small pastry type
product can be baked on a Frampton oven, for example
Bagels, Baguettes,
Biscuits, Brandy snaps,
Bread rolls, Cakes, Cheese
straws, Chinese pancakes,
Cookies, Dog biscuits,
